1 15 oz Can Chickpeas (drained) Fresh – even better (soak and cook first) a.k.a garbanzo beans.
6 TBSP Cocoa Powder
¼ coup of Honey (agave syrup)
3 TBSP Coconut Oil
2 TBSP Water
1 tsp Instant Coffee
½ tsp vanilla extract
Salt to taste (pinch)
Through all ingredients into a food processor and Voilà!

This is a very yummy EcoEating recipe! It will do a lot in terms of increasing our collective Gross Domestic Happiness! In addition because its primary ingredient is chickpeas it is very EcoEnlightened. Chickpeas along with lentils, peas, and other beans are “edible beans” also called legumes. Legumes are considered EcoEnlightened because of their reduced dependence on fossil fuels. Instead of requiring fertilizer applications, they are able to obtain much of their nitrogen requirement from the atmosphere by forming a symbiotic relationship with Rhizobium bacteria in the soil. Pulse crops’ low crop residues and low carbon-to-nitrogen ratios eliminate the need for burning and make rotating to the next crop using reduced tillage very easy.
Are they healthy for you? Chickpeas are low in Saturated Fat, and very low in Cholesterol and Sodium. They are also a good source of Dietary Fiber, Protein and Copper, and a very good source of Folate and Manganese. However they do contain carbs but they are considered “good carbs” as they contain many good nutrients, protein, and fiber. They are also a good substitute for meat.
